#18: Vegan Wednesday #13

Today's the end of Vegan MoFo and I am a bit disappointed, because I planned SO much but actually didn't make it ;-(
But I found sooo many great blogs, recipes, inspirations... and I'm going to look through all the categories and posts from this Vegan MoFo for collecting even mooore :-D

If you like to read more from me and my recipes, then click here! I added the translation gadget, even I know how baad the google translation is, I hope that it maybe helps to understand my recipes (the pictures will do as well, I think!!).


Next year I will start preparing already in summer :-D This year I just got to know from this event about 1 week before it started... so.. I guess that was my problem. Have a great time & see you in one year again!


Soooo, this is my last post, unfortunately only the 18th ;-(, the Vegan Wednesday again!

#17: Halloweentorte // Halloween Cake!

I proudly present.... my green slimy scary halloween cake! A cemetery with disgusting slime which waits for everyone who will be buried there *boohooo* *spooohooky*
;-D

That cake is made of chocolate cake and colored vanilla pudding! On top I crumbled chocolate cake and shaped some figures out of marzipan and painted them with chocolatecream (soy milk + cocoa powder, about 1:1) and strawberry jam... I mean blood ;)

My mum couldn't even eat the green pudding because she was so scared of the color :-D But my boyfriend and me ate it and it was soooo chocolaty!! yummmmmm :-))

#16: Rosmarintofu mit Bohnen an Rahmspinat // Rosemary tofu with beans & cream spinach

-English translation below-

Frischer Blattspinat ist etwas Tolles! Entweder direkt im Salat verwendet, als Smoothiekomponente oder fix in einem Topf mit Margarine und etwas Sojasahne zubereitet.. ein Multitalent :-)

ich hatte beim Spinatkochen etwas Wasser dazugegeben..hat zwar geschmeckt, ist aber unnötig, deshalb ist es im Rezept anders und auf dem Bild so "wässrig"




Ihr braucht:
für den Rahmspinat
- eine handvoll Blattspinat
- 2EL Margarine
- 1 kleine Zwiebel
- 4EL Tofutti Ricotta oder Sojasahne
- Salz, Pfeffer, 1TL Muskat
für den Rosmarintofu
 - 200gr Naturtofu
- 1 kleine Zwiebel
- 1 Tomate
- eine handvoll Brechbohnen
- 1EL Rosmarin
- 1TL Muskat
- Salz, Pfeffer
- Öl

So geht's:
Für den Rosmarintofu den Naturtofu mit einer Gabel zerdrücken und mit einer gewürfelter Zwiebel, klein geschnittener Tomate, den Bohnen (Enden verlesen, halbieren) und den Gewürzen vermengen. Öl in einer Pfanne erhitzen und das Ganze kross anbraten, bis der Tofu etwas gebräunt ist.
Den Blattspinat waschen, trocken schütteln und eventuell unschöne Stellen entfernen. In einem Topf die Margarine schmelzen, die gewürfelte Zwiebel anschwitzen und den Blattspinat dazugeben. Fällt dieser zusammen, kommt der Ricotta bzw die Sojasahne dazu. Alles miteinander vermengen und mit Gewürzen abschmecken.
Zusammen mit dem Rosmarintofu servieren!




I added some water while cooking the spinach, what was delicious but not neccessary, so I changed that in the recipe and that's the reason why the spinach looks so "watery" in this picture!

Fresh leaf spinach is great! You can use it raw as ingredient in a salad or smoothie or you cook it with some onion and cream... such an all-rounder!

You need:
for the cream spinach
- a handful leaf spinach
- 2 tablespoons vegan margarine
- 4 tablespoons "Tofutti Ricotta" or soy cream
- salt, pepper, 1 teaspoon nutmeg
for the rosemary tofu
- 200gr firm tofu
- 1 small onion
- 1 tomato
- a handful green beans
- 1 tablespoon rosemary spice
- 1 teaspoon nutmeg
- salt, pepper
- oil


How to do:
Mash the tofu with a fork and mix with diced onion, tomato, beans (sort out end and halve) and spices. Heat oil in a pan and fry until the tofu is crisp.
Wash and dry spinach, melt margarine in a pan, sautée diced onion and add the spinach. When the spinach wilts, add ricotta/soy cram. Mix together and season to taste.
Serve with the rosemary tofu and enjoy!

#14: whole-grain pasta with zucchini-pepper-sauce

Wenn's mal schnell gehen muss, aber nicht "nur" Tomatensauce sein soll :-D
 

Ihr braucht:
- 500gr Vollkornspaghetti
- 500gr passierte Tomaten

- 100ml Hafersahne/Pflanzensahne

- eine Zucchini

- eine rote Paprika

- 50gr schwarze Oliven

- 2EL vegane Margarine

- Salz, Pfeffer

- 3EL Olivenöl

- Petersilie (optional)


So geht's:

Zucchini, Paprika und Oliven klein schneiden und Olivenöl in einer kleinen Pfanne erhitzen. Zuerst Zucchini 2-3 Minuten anbraten, dann Paprika und Oliven dazugeben. Nach weiteren 5 Minuten mit  passierten Tomaten und Sahne ablöschen, Margarine unterrühren und alles 10 Minuten köcheln lassen. Zwischendurch mit Salz und Pfeffer abschmecken.

Dann die Sauce mit den gekochten Vollkornspaghetti vermengen und mit etwas Petersilie garniert servieren!


 
When you don't have much time to cook, but wanna have more than "simple" tomatosauce :-D

You need:
- 500gr whole grain pasta
- 500gr sieved tomatoes
- 100ml oat cream/ other plant based cream 
- one zucchini
- one red bell pepper
- 50gr black olives
- 2 tablespoons vegan margarine
- salt, pepper
- 3 tablespoons olive oil
- parsley (optional)

How to do:
Mince zucchini, bell pepper and olives and heat oil in a pan. First roast the zucchini for 2-3minutes, then add pepper and olives. After 5 more minutes add sieved tomatoes and the oat cream. Fold in margarine and let it cook for about 10 minutes. In the meantime add salt and pepper to taste.
At the end mix together sauce and cooked pasta, add some parsley and enjoy!

#13: Vegan Wednesday #12

Last week I decided to not translate my Vegan Wednesday for MoFo, because it simply wasn't that spectacular! This week I really ate A LOT (by my standards).. I guess it's because of that grey and cold weather... just not comfortable, so I needed delicious food to raise my spirits!



Vegan Wednesday #12 - 24th October 2012

For breakfast I had pumpkinseedbread with avocado and tomatoes + two clementines.

What was for lunch? We ate the rest of yesterday evening: spaghetti with soy-meatball-tomatosauce... that reminds me of Disney's "Lady and the Tramp" :-D






















On the road I drank a vanilla soylatte at Starbucks, but I didn't take a picture of it (I guess everyone knows how coffee looks like!!).
When I came home a bad-weather-hunger-attack got me.. so I used the second half of my morning avocado and had another bread with it (+ olives.. hmmm!!).


For dinner I had selfmade couscous with ajvar (paprika paste), tomatoes, cucumber, onion and black olives!


And FINALLY as dessert I ate one marble cake muffin with chocolate fondant!
(My boyfriend wanted to have marble cake some time ago, so I decided to bake a muffin-version of it yesterday!)


Repleted with soooo much food I will go to my warm bed now... and I am excited -as every week!!- for all the nice food the other participants made this week!!

#12: vegane Frühstücks-Ideen // vegan breakfast suggestions

Bald lebe ich schon seit einem Jahr vegan und eine der häufigsten Fragen, die mir gestellt wurden, lautet:
"Was isst du denn zum Frühstück!?!?"
So ganz nachvollziehen kann ich diese Frage zwar immer noch nicht, aber für alle, die sich wundern was bei mir oder allgemein vegan lebenden Menschen so auf dem Frühstückstisch landet, hier ein kleiner Einblick in die vegane Vielfalt des Frühstückens.. meine alltäglichen morgendlichen Mahlzeiten!

Soon one year passed, since I decided to live vegan, and one of the most asked questions to me was/is:

"What do have for breakfast!?!?"
I still can't really understand why people ask me that, but now for everyone who wonders what I or other vegans eat in the morning, I collected some pictures of my usual breakfast!

#11: Sobanudelpfanne mit Tempeh, Brokkoli & Paprika // soba pasta with tempeh, broccoli & bell pepper

Mein Rezept für heute mit kleiner Vorgeschichte :-D Gestern war ich erst auf dem Bürgeramt und musste mich geschlagene 3 Stunden gedulden, bis ich endlich rankam (Führungszeugnis für meinen zukünftgen Arbeitgeber beantragen). Danach war ich zwar total gerädert vom Warten, aber hab mich doch noch, glücklicherweise, in einen Asialaden geschleppt!
Dort habe ich Tempeh, Sobanudeln und Hoisinsauce (ich liebe diese Sauce!!) gekauft und diese Nudelpfanne draus gezaubert ;-)


Ihr braucht:
- 150gr Sobanudeln
- die Röschen eines halben Brokkolis
- eine rote Paprika
- 150gr Tempeh
- 50ml Hoisinsauce
- 1TL Sambal Oelek
- 200ml Gemüsebrühe
- 1EL Speisestärke, in kaltem Wasser aufgelöst

- Sonnenblumenöl
- Worcestersauce
- Kümmel, Salz, Currypulver
- Sesam

So geht's:
Die Paprika in Streifen schneiden und die Brokkoliröschen in kleinere Röschen teilen. In Salzwasser 8-10 Minuten kochen, bis beides bissfest ist, aber nicht zu weich. In ein Sieb das Kochwasser abgießen und Brokkoli und Paprika beiseite stellen. Den Tempeh in feine Streifen schneiden und in einer Marinade aus Öl, Worcestersauce, Kümmel und Currypulver für 5 Minuten einlegen.
Etwas Öl in einer Pfanne erhitzen, Paprika und Brokkoli kurz drin anbraten und anschließend Tempeh dazugeben und braten bis dieser etwas knusprig wird. Hoisinsauce, Sambal Oelek und die Gemüsebrühe vermengen und damit das Gemüse und den Tempeh ablöschen. Kurz köcheln lassen, Speisestärke einrühren und mit Gewürzen abschmecken.
Die Nudeln nach Gebrauchsanweisung kochen und danach direkt mit in die Pfanne geben und mit der Sauce vermengen. Zum Schluss Sesam (Menge nach Belieben) unterheben.
Direkt servieren und genießen!!


Yesterday I went to an Asian Supermarket and bought tempeh, soba pasta (buckwheat pasta) AND hoisin sauce.. i love this sauce so much, the taste is awesome!
And this is what I made out of these things :-)
 
You need:
- 150gr soba pasta
- broccoli florets of 1/2 broccoli
- one red bell pepper
- 150gr tempeh
- 50ml hoisinsauce
- 1 teaspoon sambal oelek
- 200ml vegetable broth
- 1 tablespoon cornstarch, dissolved in cold water

- sunflower oil
- worcestersauce
- cumin, salt, curry powder
- sesame

How to do:
Cut bell pepper into stripes and divide broccoli florets in smaller florets. Cook both for about 8-10 minutes in salted water, until firm to the bite but not too smooth! Strain of the cooking water and set aside.
Cut tempeh in small stripes and marinade in a mixture of oil, worcestersauce, cumin und curry powder for 5 minutes.
Heat some oil in a pan, first roast pepper and broccoli and then the tempeh as well, until crisp. Now mix hoisinsauce, sambal oelek and vegetable broth and deglaze pepper, broccoli and tempeh with it. Let cook for a few minutes, add cornstarch and add seasonings.
Cook soba pasta and, when done, add to the pan and mix with the sauce-vegetable-mixture. At the end fold in sesame and serve instantly!

#10: Kohlrouladen mit Sojahack // cabbage roll with minced soy

- English translation below -

Seit knapp einer Woche bunkern wir nun schon diesen rieeesigen Weißkohl, aus dem ich ja bereits etwas in meiner Sesampfanne verarbeitet habe. Nun aber endlich das, was ich unbedingt ausprobieren wollte und was auch wirklich gut gelungen ist: vegane Kohlrouladen!




Ihr braucht:
- 8 große Weißkohlblätter
- 100gr Sojagranulat + Gewürze (Salz, Kümmel, Paprika) + Worcestersauce
- 1 Paprika, rot
- 1 große Zwiebel
- 50ml passierte Tomaten
- 300ml Gemüsebrühe
- Sonnenblumenöl
- Bindfaden!

- 500gr Kartoffeln
- braune Sauce, z.B. von Tartex

So geht's:
Die Kartoffeln klein schneiden und in Salzwasser weich kochen. Die Kohlblätter vom harten unteren Ende befreien (etwa 2-3cm) und dann in kochendem Wasser etwa 8-10 Minuten blanchieren, sie sollten biegbar, aber nicht zu weich sein, denn dann reißen sie zu leicht beim "Verpacken".
Das Sojagranulat wird 10 Minuten in Salzwasser eingeweicht, dann in einem Sieb mit warmem Wasser abgespült, ausgedrückt und anschließend mit Gewürzen und Worchestersauce gewürzt. Paprika und Zwiebel würfeln und zum Sojagranulat geben. Reichlich (!) Öl in einer Pfanne erhitzen, das Sojagemisch hineingeben, ordentlich mit dem Öl vermengen und scharf anbraten. Sind die Zwiebeln glasig, wird das Ganze mit den passierten Tomaten abgelöscht, vermengt und noch etwa 2-3 Minuten in der Pfanne gelassen.
Die weichen Kohlblätter vorsichtig herausnehmen und jeweils mit 2-3EL Sojagemisch befüllen. Zu Päckchen einschlagen und mit Bindfaden fixieren. Alle Rouladen in eine Auflauf- oder Bratenform legen, mit Gemüsebrühe übergießen und im vorgeheizten Backofen bei 200°C 10-15 Minuten garen.
Zum Schluss die braune Sauce oder eine ander Sauce nach Wahl vorbereiten und zusammen mit den Kartoffeln und den Rouladen servieren.

Since last monday we have this huuuge white cabbage at home, with which I already made my sesame stir-fry. But now - finally - the dish, I wanted to try out for so long.. and it was really good: vegan cabbage rolls!

You need:
- 8 big leafs of white cabbage
- 100gr imitation bacon bits (is that right? I'm talking about texturized dry soy)
- seasonings for the soaked soy: salt, cumin, bell pepper
- worcester sauce
- 1 red bell pepper
- 1 big onion
- 50ml sieved tomatoes
- 300ml vegetable broth
- sunflower oil
- string for fixing the rolls

- 500gr potatoes
- instant brown sauce


How to do:
Cut potatoes into cubes and cook in salted water until done.
Remove the hard ends of the cabbage leafs and blanch in boiling water for about 8-10 minutes. The leafs should be bendable, but not too smooth, otherwise they will break when you roll them around the filling.
After that, soak the soy in hot salted water for about 10 minutes. Then give it a wash with warm water in a sieve, squeeze as much water as possible and season with cumin, salt, bell pepper and the worcester sauce. Cut bell pepper and onion into cubes, mix it with the soaked soy. Heat plenty (!) of oil in a pan, add the soy-mixture, combine well with the oil and sear until the onions are glassy. Then deglaze it with the sieved tomatoes, mix well again and stir-fry for another 2-3 minutes.
Carefully take out the smooth cabbage leafs and stuff every leaf with 2-3 tablespoons of the soy-mixture. Form small "packages" and fix with a string. Put all the rolls into a baking dish, douse with vegetable broth and cook in the preheated oven at 200°C (about 400 degrees Fahrenheit) for about 10-15 minutes.
At the end prepare the brown sauce or another sauce you like and serve together with potatoes and the rolls.

#9: Sesampfanne mit Weißkohl & Räuchertofu // sesame stir-fry with white cabbage & smoked tofu

Heute ein Rezept für eine leckere Gemüsepfanne, die vielleicht nicht unbedingt schön aussieht, aber wirklich toll schmeckt!


Ihr braucht:
- etwa 10 Weißkohlblätter
- eine rote Paprika
- 200gr Räuchertofu
- 100gr Rucola
- 5EL Sesam
- 3-4EL Sonnenblumenöl
- Salz, Pfeffer

So geht's:
Paprika und Räuchertofu werden gewürfelt, der Rucola verlesen und beiseite gestellt und die Weißkohlblätter in feine Streifen geschnitten. Dabei das untere harte Ende entfernen.
Öl in einer Pfanne erhitzen und Paprika, Tofu und Kohl darin wenden und anbraten/dünsten, bis der Tofu knusprig und der Kohl weich ist. Dann den Sesam unterheben und die Herdplatte ausstellen. Den Rucola kurz vorm servieren unterheben, sodass er zwar etwas "schlaff" wird, aber nicht ganz an Form und grüner Farbe verliert.
Mit Salz und Pfeffer würzen und genieeßeeen =)


Today I've got a recipe for you, which is easy and fast to make. And although it isn't a beauty, it is sooo delicious!

You need:
- about 10 leafs of white cabbage
- one red bell pepper
- 200gr smoked tofu
- 100gr arugula
- 5 tablespoons sesame
- 3-4 tablespoons sunflower oil
- salt, pepper

How to do:
Cut bell pepper and tofu into cubes and white cabbage into thin slices. Wash and sort out arugula and set aside. Heat oil in a pan and roast gently until tofu cubes are crisp and the cabbage slices are soft. Now add sesame and switch off the hotplate. Add arugula, salt and pepper and serve immediately.
Enjoy your meal! :-)

 Vegan Wednesday #10 - 10th October 2012


For breakfast I had bread with black olive puree and "salami" plus one pear :-)




Moreover I made me green tea with coconut milk and agave syrup, it's a recipe from the German vegan chef "Attila Hildmann" from his brand new book "vegan for fit". Almost every German blogger is in the vegan for fit - fever... and yes, me too :-D
That drink was quite good, but even after mixing it I had to stir it several times before drinking, because otherwise the coconut milk was on the surface and that tasted.. a bit strange :-D


The rest of the coconut milk from my green tea drink I used for lunch!
I had coconut-curry-quinoa with some seitan cubes, bell pepper and zucchini spaghetti.




For dinner my mum and me "transformed" a raw celery soup, which WASN'T GOOD and we are definitely NOT fastidious referred to [vegan] food, from yesterday to a vegetable creme soup with broccoli, potatoes, onions, carrots, vegetable broth, seasonings and tofutti ricotta (no, we don't really like it, but we got it as a present to an order of vegan food from our favorite online-shop and for soups or sauces it is okay :-) ).




And later this evening hunger got me again ;-( So I put together arugula, tomato and some dressing for having a nice salad and made me some bread with fresh cress!




So, now I am very excited, just like every week hehe, what the other participants ate today! ♥ Maria

#7: Zucchini-Kartoffel-Rösti an Petersilien-Apfel-Salat // zucchini-potatoe-rösti with parsley apple salad

Zur Zeit habe ich es ja mit der Petersilie :-D Einige von euch werden dieses "Gericht" vom vegan Wednesday #7 kennen, hier nun das Rezept.. schnell, einfach & leckerrrrrr (und extra nochmal gemacht & diesmal mitgeschrieben :-D)!


Ihr braucht:
Rösti
- eine große Kartoffel
- eine halbe Zucchini
- eine kleine Zwiebel
- Salz, Pfeffer
- Prise Knoblauchpulver
- 1 TL Rosmarin
- 5-6EL Vollkornmehl
- Öl zum Anbraten

Salat
- eine Handvoll Petersilie
- einen großen Apfel
- 2EL Sesam
- 2EL Kürbiskerne
- 1EL Zitronensaft
- 2EL Rapsöl
- Salz, Pfeffer, Rosmarin

So geht's:
Zucchini und geschälte Kartoffel grob reiben, mit gewürfelter Zwiebel sowie den Gewürzen und Mehl vermengen. Es sollte eine nasse, aber leicht klebrige Masse entstanden sein!
Erhitzt das Öl in der Pfanne und bratet nun ca. 6 kleine Rösti aus (bei mir: ein ordentlich voller Esslöffel = ein Rösti).
Für den Salat schneidet ihr Petersilie und Apfel klein und vermengt sie mit dem Rest. Mit den Gewüzen bzw. deren Menge dabei nach Geschmack variieren!
Zusammen mit den Rösti und einem Dip nach Wahl servieren (ich hatte den Tartex Zucchini-Curry Aufstrich). 




At the moment i'm totally in love with parsley, not only because it is a perfect iron-deliverer ;-)
Three weeks ago I had this dish on a vegan wednesday and now I made it again and wrote down the recipe for you! It's easy, delicious and fast to make!

You need:
"rösti" (hash browned potatoes)
- one big potatoe
- 1/2 zucchini
- one small onion or scallion
- pinch of garlic powder
- 1 teaspoon rosemary
- 5-6 tablespoons whole-grain flour
- oil for frying

salad
- a handful parsley
- one big apple
- 2 tablespoons sesame
- 2 tablespoons pumpkin seeds
- 1 tablespoon lemon juice
- 2 tablespoons canola oil
- salt, pepper, some rosemary

How to do:
Grate zucchini and peeled potatoe and mix with diced onion as well as seasonings and flour. It should be a wet, but sticky mixture (if too wet, add some flour, if too dry, add a bit more water)!
Heat the oil in a pan, form about 6 small "rösti" (I used 1 tablespoon for one "rösti") and fry them until crisp.
For the salad cut parsley and apple into bite-size pieces and mix with the remaining ingredients. Add some seasoning and serve with the "rösti" and a dip of your choice (i used Tartex zucchini-curry spread).

#6: Gemüsewocheneinkauf // vegetable purchase this week

Heut mal ein Foto unseres Gemüseinkaufs von letzter Woche!
Ich gehe super gerne auf unseren Wochenmarkt, der Dienstag und Freitag stattfindet, denn dort findet man so viel tolle frische Dinge und vor allem viel Regionales! 
  • einen 2kilo Hokkaidokürbis
  • eine Schale Brombeeren
  • 2 Bund Radieschen
  • 2 Zucchini
  • ein halbes Kilo Tomaten
  • 5 Mohrrüben
  • eine grooße Sellerieknolle mit Grün
  • ein Bund Rote Beete (5 Stück)
  • ein riesiger Bund Petersilie (macht etwa 5 Bund aus, die man im Supermarkt zu kaufen kriegt..)
und alles zusammen für etwa 12€... und nun überlege man sich, was daraus alles gemacht werden kann und dann sage nochmal einer, vegan leben wäre SO teuer ;-)

I love going to the weekly market, it's on Tuesday and Friday, because there you find so great fresh things, and especially regional vegetables/fruits!
  • a 2kilogramm hokkaidopumpkin
  • one cup of blackberries
  • 2 bunches of radishes
  • 2 zucchini
  • 500gr tomatoes
  • 5 carrots
  • one big knob of celeriac with green on it
  • one bunch of beetroot (5 pieces)
  • a huge bunch of parsley (would be about 5 bunches from a usual supermarket)
and for all these things I payed about 12€... so just think about what you can cook out of that! People must be joking when saying, being vegan is SO expensive ;-)
