#12: Not-So-Green Green Chocolate Smoothie

I often see raw kale as a smoothie ingredient but I was never really sure about how my digestion would react to it. When I was on vacation a few weeks ago I finally tried it... and was amazed by it! I loved this smoothie and so I have to share the recipe with you ;-)







You need:
- one handful romaine lettuce
- 2-3 small leafs of kale (or 1-2 big ones)
- 2 small carrots

#11: Vegan Wednesday #57


Sorry for the long break here at my Vegan MoFo but I have a cold and didn't really feel that good to post or just do ANYTHING than sleeping and trying to get well again ;-)







Vegan Wednesday #57 - 18.9.2013


Breakfast: Oatmeal with banana, peach, fig and chocolate granola.


For lunch I had a colourful and warm vegetable soup.


Snack: One liter of a smoothie made of romaine lettuce, arugula, spinach, wheatgrass powder, pears and raspberries.
  
And for dinner I had soup again. This time with zucchini, broccoli, peas and millet.

#10: Apple Carrot Mash kisses Almond Date Cream

Hello everyone!
Today I have a nice dessert or breakfast recipe for you. The mix is a bit special because it actually shuld become a savory dish.. but then it turned out sweet ;-D



You need:
apple carrot mash
- 1 apple
- 1 big carrot
(with or without peel as desired, i didn't peeled them)
- 1 tsp cinnamon
- 1-2 tsp coconut sugar / other sweetener of choice
- pinch of salt

cream
- 1/2 cup almond milk
- 5 dates (deglet nour), soaked in warm water for 30min

and
- 4 tbsp oats mixed with 4 tbsp shredded coconut


How to do:
Slice apple and carrot into cubes and steam until smooth. Let them cool down a bit and then puree with cinnamon, sugar and salt until it has a soft texture.
Mix almond milk and dates (without soaking water) until smooth and layer with apple carrot mash and oat coconut mix.

It's Wednesday again, what means it is time for showing what I ate today ;-) Unfortunately I forgot to take my camera with me (I wasn't at home today) and so I only could take pictures with a smartphone camera.
Well, here in Germany it's already time to sleep and I have to get up early tomorrow, so I wish everyone a good night or an amazing day!

#8: Matcha meets Banana {Smoothie}

Hey everyone! It's quite late again here in Germany and this is my 8th Vegan MoFo post, yay :-D This time I have a nice, sweet and green smoothie recipe with matcha for you. I hope you enjoy it!


You need:
- 1 tsp matcha
- 1 medium banana
- 1 cup unsweetened almond milk
- 1-2 tsp coconut sugar / agave syrup

How to do:
Blend everything until smooth and taste.
For a more refreshing version, slice the banana and put in the freezer for one hour before blending with the other ingredients :-)

#7: fruity yogurt breakfast with cornflake crunch

Sorry for posting that late again, I had my first day at work today and just relaxed in front of the tv the last hours :-D
Here's another yummy and simple recipe, this time for breakfast! If you eat it right after preparing, it will be crunchy but if you want to prepare it and take it with you in a jar - no problem, it won't have a crunch but will be tasty anyway for sure!






You need:
- 1/2 cup unsweetened cornflakes
- 1/2 cup unsweetened soy yogurt (or flavor of choice)
- 1/2 tsp coconut sugar / agave syrup

#6: sweet arugula salad with grilled figs and zucchini

At the moment you can buy figs everywhere here in Germany and I looove these small purple fruits so much. Often I don't make it to "process" them because I eat them right out of our fridge :-D
So yesterday I thought, I start experimenting with figs and my grill pan and so this sweet salad came up!


You need:
- two medium figs
- 1/2 medium zucchini
- a big handful arugula
- 4-5 cherry tomatoes

#5: homemade "Raw Bite Cacao" Bar // Recovered..

Hello everyone! Sorry for posting that late but today was such a sunny day, I spent it after working out on my balcony and outside in the sun and totally forgot about the time :-)
I hope you also had an amazing day and a great start into the weekend!
Today's recipe is very simple and shows you how to make your own "Raw Bite Cacao" bar at home!
Raw Bites are fully raw bars which are only sweetened with natural ingredients (dates). They are more chewy than crunchy but sooo delicious.
So here's my try to "copy" them:




You need:
- 1/2 cup deglet nour dates (10 pieces)

#4: Favorite Post Workout Shake // Lunch at the La Mano Verde in Berlin // Haircut at Night

This time I want to show you my all time favorite of protein shakes: Banana chocolate!
My favorite protein powder is the Sunwarrior, a raw rice protein which is great to digest. I also own soy isolate but when I use it too often it makes me bloat a lot, so I decided to use it only for baking until it's empty. Pea Protein is the third kind of protein powder I have at home at the moment (freaaaaak, i know, i tried out a lot!) and that is a great alternative to soy as well! Great to digest, to blend in smoothies AND by far not as pricey as the Sunwarrior!
Oh, and raw hemp protein is amazing as well, it has a nutty taste and is great in smoothies!

 

You need:
- 1 medium banana
- 1 scoop sunwarrior chocolate (or vanilla)
- 1 cup unsweetened almond milk oder water

This time I have an almost raw recipe for you! Almost because my nori sheets and the tahin are not raw but if you have these ingredients, you can do it FULLYYYY raw ;-)

Yay, here it is: my first post of the Vegan Month of Food 2013! Excitinggggg!
And as you can read above, the first post is already packed with lot of content... or more pictures :-D

This week I'm on vacation but I will not leave my home, I'll stay in Berlin (Germany). My mum is on vacation too, so we'll visit some vegan restaurants and cafes for sure. 
My plan for this week is to post a recipe everyday, plus one picture (minimum) of me/the day. Probably you'll see pictures of me after working out at the gym everyday the upcoming 7 days because I was ill for the last two weeks what meant I couldn't do any sports. But, of course, I hope to show you a bit more than only a sweaty me ;-D

Welcome to my Vegan Month Of Food 2013!

Heyyy everyone!

Just wanted to say "Hi" for the second time! I am already very excited how everything will turn out, because I planned a little bit more than last year and hope that I will manage to post enough this time!

this is me now, 2013 :-)

My category this year is "Healthy and Whole Foods" because I started working out regularly 9 months ago and with that I also began to read a lot about nutrition and diets. After months of of experimentation I figured out that a high carb clean (less to no sugar, salt, coffee, junk/processed food and tons of fresh fruit and veggies, whole grain products, a lot of water and tea, ..) diet with a moderate amount of fat ist MY kind of diet. I love fruit (tons!!!) and realized that low carb is nothing for me, because I need energy for my workouts and my everyday life! Plus my bloating disappeared when I started eating more carbs than protein, great, right?
So, enough of my diet problems, this month I will show you some of my favorite meals + recipes, which will be clean AND, the most important, delicious!!

Let's get it started MoFo-ers and everyone who reads my blog :-D

#18: Vegan Wednesday #13

Today's the end of Vegan MoFo and I am a bit disappointed, because I planned SO much but actually didn't make it ;-(
But I found sooo many great blogs, recipes, inspirations... and I'm going to look through all the categories and posts from this Vegan MoFo for collecting even mooore :-D

If you like to read more from me and my recipes, then click here! I added the translation gadget, even I know how baad the google translation is, I hope that it maybe helps to understand my recipes (the pictures will do as well, I think!!).


Next year I will start preparing already in summer :-D This year I just got to know from this event about 1 week before it started... so.. I guess that was my problem. Have a great time & see you in one year again!

#17: Halloweentorte // Halloween Cake!

I proudly present.... my green slimy scary halloween cake! A cemetery with disgusting slime which waits for everyone who will be buried there *boohooo* *spooohooky*
;-D

That cake is made of chocolate cake and colored vanilla pudding! On top I crumbled chocolate cake and shaped some figures out of marzipan and painted them with chocolatecream (soy milk + cocoa powder, about 1:1) and strawberry jam... I mean blood ;)

My mum couldn't even eat the green pudding because she was so scared of the color :-D But my boyfriend and me ate it and it was soooo chocolaty!! yummmmmm :-))

#16: Rosmarintofu mit Bohnen an Rahmspinat // Rosemary tofu with beans & cream spinach

-English translation below-

Frischer Blattspinat ist etwas Tolles! Entweder direkt im Salat verwendet, als Smoothiekomponente oder fix in einem Topf mit Margarine und etwas Sojasahne zubereitet.. ein Multitalent :-)

ich hatte beim Spinatkochen etwas Wasser dazugegeben..hat zwar geschmeckt, ist aber unnötig, deshalb ist es im Rezept anders und auf dem Bild so "wässrig"




Ihr braucht:
für den Rahmspinat
- eine handvoll Blattspinat
- 2EL Margarine
- 1 kleine Zwiebel
- 4EL Tofutti Ricotta oder Sojasahne
- Salz, Pfeffer, 1TL Muskat
für den Rosmarintofu
 - 200gr Naturtofu
- 1 kleine Zwiebel
- 1 Tomate
- eine handvoll Brechbohnen
- 1EL Rosmarin
- 1TL Muskat
- Salz, Pfeffer
- Öl

So geht's:
Für den Rosmarintofu den Naturtofu mit einer Gabel zerdrücken und mit einer gewürfelter Zwiebel, klein geschnittener Tomate, den Bohnen (Enden verlesen, halbieren) und den Gewürzen vermengen. Öl in einer Pfanne erhitzen und das Ganze kross anbraten, bis der Tofu etwas gebräunt ist.
Den Blattspinat waschen, trocken schütteln und eventuell unschöne Stellen entfernen. In einem Topf die Margarine schmelzen, die gewürfelte Zwiebel anschwitzen und den Blattspinat dazugeben. Fällt dieser zusammen, kommt der Ricotta bzw die Sojasahne dazu. Alles miteinander vermengen und mit Gewürzen abschmecken.
Zusammen mit dem Rosmarintofu servieren!




I added some water while cooking the spinach, what was delicious but not neccessary, so I changed that in the recipe and that's the reason why the spinach looks so "watery" in this picture!

Fresh leaf spinach is great! You can use it raw as ingredient in a salad or smoothie or you cook it with some onion and cream... such an all-rounder!

You need:
for the cream spinach
- a handful leaf spinach
- 2 tablespoons vegan margarine
- 4 tablespoons "Tofutti Ricotta" or soy cream
- salt, pepper, 1 teaspoon nutmeg
for the rosemary tofu
- 200gr firm tofu
- 1 small onion
- 1 tomato
- a handful green beans
- 1 tablespoon rosemary spice
- 1 teaspoon nutmeg
- salt, pepper
- oil


How to do:
Mash the tofu with a fork and mix with diced onion, tomato, beans (sort out end and halve) and spices. Heat oil in a pan and fry until the tofu is crisp.
Wash and dry spinach, melt margarine in a pan, sautée diced onion and add the spinach. When the spinach wilts, add ricotta/soy cram. Mix together and season to taste.
Serve with the rosemary tofu and enjoy!

#15: Geburtstags-Kaffeetafel // Birthday coffee table

Meine Mama hatte am Samstag Geburtstag und da feierten wir im kleinen Rahmen... natürlich mit veganem selbstgebackenem Kuchen :-D
Last Saturday was my mom's birthday and we celebrated it ... of course with self-made vegan cake :-D

Bratapfelmus (Apfelmus mit Zimt & Marzipan) in Haferteighülle.. hiervon inspiriert // baked apple puree (apple puree with cinnamon & marzipan) in oat cups... inspired by that recipe

#14: whole-grain pasta with zucchini-pepper-sauce

Wenn's mal schnell gehen muss, aber nicht "nur" Tomatensauce sein soll :-D
 

Ihr braucht:
- 500gr Vollkornspaghetti
- 500gr passierte Tomaten

- 100ml Hafersahne/Pflanzensahne

- eine Zucchini

- eine rote Paprika

- 50gr schwarze Oliven

- 2EL vegane Margarine

- Salz, Pfeffer

- 3EL Olivenöl

- Petersilie (optional)


So geht's:

Zucchini, Paprika und Oliven klein schneiden und Olivenöl in einer kleinen Pfanne erhitzen. Zuerst Zucchini 2-3 Minuten anbraten, dann Paprika und Oliven dazugeben. Nach weiteren 5 Minuten mit  passierten Tomaten und Sahne ablöschen, Margarine unterrühren und alles 10 Minuten köcheln lassen. Zwischendurch mit Salz und Pfeffer abschmecken.

Dann die Sauce mit den gekochten Vollkornspaghetti vermengen und mit etwas Petersilie garniert servieren!


 
When you don't have much time to cook, but wanna have more than "simple" tomatosauce :-D

You need:
- 500gr whole grain pasta
- 500gr sieved tomatoes
- 100ml oat cream/ other plant based cream 
- one zucchini
- one red bell pepper
- 50gr black olives
- 2 tablespoons vegan margarine
- salt, pepper
- 3 tablespoons olive oil
- parsley (optional)

How to do:
Mince zucchini, bell pepper and olives and heat oil in a pan. First roast the zucchini for 2-3minutes, then add pepper and olives. After 5 more minutes add sieved tomatoes and the oat cream. Fold in margarine and let it cook for about 10 minutes. In the meantime add salt and pepper to taste.
At the end mix together sauce and cooked pasta, add some parsley and enjoy!

#13: Vegan Wednesday #12

Last week I decided to not translate my Vegan Wednesday for MoFo, because it simply wasn't that spectacular! This week I really ate A LOT (by my standards).. I guess it's because of that grey and cold weather... just not comfortable, so I needed delicious food to raise my spirits!



Vegan Wednesday #12 - 24th October 2012

For breakfast I had pumpkinseedbread with avocado and tomatoes + two clementines.

What was for lunch? We ate the rest of yesterday evening: spaghetti with soy-meatball-tomatosauce... that reminds me of Disney's "Lady and the Tramp" :-D






















On the road I drank a vanilla soylatte at Starbucks, but I didn't take a picture of it (I guess everyone knows how coffee looks like!!).
When I came home a bad-weather-hunger-attack got me.. so I used the second half of my morning avocado and had another bread with it (+ olives.. hmmm!!).


For dinner I had selfmade couscous with ajvar (paprika paste), tomatoes, cucumber, onion and black olives!


And FINALLY as dessert I ate one marble cake muffin with chocolate fondant!
(My boyfriend wanted to have marble cake some time ago, so I decided to bake a muffin-version of it yesterday!)


Repleted with soooo much food I will go to my warm bed now... and I am excited -as every week!!- for all the nice food the other participants made this week!!
